Quick & Easy Lunch Bowl Ideas

We love a sandwich as much as the next gal, but sometimes you need to mix things up. Try building a batch of bowls—all based on shredded chicken and brown rice—that do double duty for you and the kids.

A Balanced Meal in a Bowl

To brown rice and shredded chicken, add:

  • Corn + cheese + salsa + lime
  • Edamame + shredded carrot + basil (shown above) + miso vinaigrette
  • Roasted sweet potato + crumbled feta + parsley + harissa vinaigrette 

Quick tip: Swap the brown rice for cauliflower rice or salad greens. 

Start from scratch.

• Make enough rice for the whole week.

Broil the corn for a little char.

• Bake your chicken while you roast your sweet potato.

Get a little help.

Fast: Shred rotisserie chicken.

• Faster: Slice breasts purchased from the deli section.

• Fastest: Look for diced chicken on the salad bar.
